When winter storms hit, I’m loathe to leave the comfort of the fireplace to venture out into the cold, so I scrounge through my pantry and fridge, hoping for inspiration. Hmmm. Onions. Not too impressive. But wait!  French Onion Soup!

Very simple to make, it requires a minimum of ingredients. Caramelizing the onions takes a bit of time, but that it’s a very fair exchange for the luxury of staying in. If you don’t have beef stock, by all means substitute frozen chicken stock, and some reduced veal stock provides additional flavour.

My freezer provided some baguette slices to toast, trimmed to fit the soup bowls, and covered with a handful of grated gruyere cheese before popping them under the broiler for a few minutes. The perfect meal for a cold day.
