A colourful and flavourful twist on a refreshing minty classic.
- 2 oz white rum
- 2 oz club soda
- 1/2 oz lime juice (about 1/2 a lime)
- 6–7 mint leaves
- 3 blackberries
- 3/4 oz simple syrup (adjust as needed; berries vary greatly in their sweetness)
- 1 c ice
- Muddle the lime juice, mint leaves, blackberries and simple syrup in a Boston shaker. Add the rum and ice and shake well (about 10 seconds).
- Pour the contents into a glass, top with two ounces of club soda and stir. You don’t need to strain the beverage, but may wish to let it settle for a couple of minutes before serving to allow the clear colour of the drink to emerge. Garnish with mint leaves and and a blackberry.
