It’s the summer of the blackberry. Inspired by a drink we had at The Glass Onion in Falmouth, we decided to try our hands at this refreshing beverage. The Glass Onion cocktail is made with Blackberry liqueur, and it’s delicious.
Mojitos typically contain rum, and this delicious version is no exception. Made with simple syrup and muddled blackberries, it’s easy to adjust the sweetness of the beverage to suit the berries at hand, as well as the drinker’s taste.

Blackberry Mojito
A colourful and flavourful twist on a refreshing minty classic.
Ingredients

- 60 ml or 2 oz white rum
- 60 ml or 2 oz club soda
- 15 ml or ½ oz lime juice (about ½ a lime)
- 6–7 mint leaves
- 3 blackberries
- 22 ml or ¾ oz simple syrup (adjust as needed; berries vary greatly in their sweetness)
- 250 ml or 1 c ice
Instructions
- Muddle the lime juice, mint leaves, blackberries and simple syrup in a Boston shaker. Add the rum and ice and shake well (about 10 seconds).
- Pour the contents into a glass, top with two ounces of club soda and stir. You don’t need to strain the beverage but may wish to let it settle for a couple of minutes before serving to allow the clear colour of the drink to emerge. Garnish with mint leaves and a blackberry.
