The home fries reheat well, so don’t hesitate to double the recipe.

Savoury Home Fries with Hollandaise Sauce

Rich, savoury home fries topped with poached eggs and hollandaise sauce make a luxurious breakfast or brunch.

For the Home Fries

  • 57 g or 2 oz unsalted butter
  • 150 g (1 large) yellow onion, peeled and diced
  • 775 g or 1 ½ lb potatoes, par-cooked and diced
  • 227 g or ½ lb Virginia ham, diced
  • 225 g or ½ lb cremini mushrooms, finely sliced
  • 300 g green pepper (1 large), cored and diced
  • 125 g or ¼ pint grape tomatoes, chopped
  • Kosher salt
  • Freshly ground black pepper

 

For the Hollandaise Sauce

Makes approximately 175 ml or ¾ c of sauce.

  • 3 large egg yolks (freeze the whites for another
    use)
  • 15 ml (1 tbsp) fresh lemon juice (about ½ one
    large lemon)
  • pinch of kosher salt
  • 127 g or 4 oz butter, melted

Instructions

Make the Home Fries

  1. In a large skillet over medium-high heat, sauté the onion until translucent (2 minutes). Add the potatoes and ½ tsp of kosher
    salt and cook, stirring occasionally, until they begin to brown and become crispy (3-5 minutes).
  2. Add the ham, mushrooms and green pepper. Sauté until the mushrooms begin to brown and the green pepper softens (3-5 minutes). Add the tomatoes and continue to cook until they are softened (1-3 minutes).
  3. Adjust seasonings and serve, topped with a poached egg and Hollandaise sauce.

Make the Hollandaise Sauce

  1. In a small stainless steel bowl, whisk the egg yolks until frothy. Whisk in the lemon juice and salt.
  2. In a small pan over high heat, bring 1” of water to a brisk simmer. Place the bowl of eggs over the bubbling water (ensuring the bowl does not touch the water). Heat, whisking constantly, until the egg mixture turns pale yellow and is slightly thickened.
  3. Remove from the heat and whisk in the melted butter until the sauce is smooth and thickened.
  4. Serve warm.
