This is a salad that crunches — in all the best ways. Think of it as a cousin to panzanella: tart apples where tomatoes might be, toasted breadcrumbs in place of chewy cubes, and a lime-forward vinaigrette for a bright, slightly unexpected finish. It’s light but full of texture, savoury with a whisper of sweetness, and especially welcome alongside a roast chicken or a board of sharp cheeses and cider.
Savoury Orchard Panzanella
A crunchy, savoury salad with orchard charm and a citrus twist.
Ingredients
- 60g or 1 cup very coarse fresh breadcrumbs
- 60g or ½ cup walnut halves
- 2 crisp apples (Pink Lady or Honeycrisp), cored and thinly sliced
- 4 scallions, thinly sliced
- 15g or ¼ cup fresh flat-leaf parsley leaves
- 60ml or ¼ cup fresh lime juice (or 30ml or 2 tbsp fresh lime juice plus 15ml or 1 tbsp apple cider vinegar)
- 2.5ml or ½ tsp crushed red pepper flakes
- Kosher salt and freshly ground black pepper, to taste
- 30ml or 2 tbsp extra virgin olive oil, plus more if needed
- 55g or ½ cup grated provolone or sharp white Cheddar
Instructions
Toast the breadcrumbs
Preheat oven to 175°C or 350°F. Spread breadcrumbs on a rimmed baking sheet. Toast 6–8 minutes, stirring occasionally, until golden. Let cool.
Toast the walnuts
On a separate sheet, toast the walnuts 8–10 minutes, or until fragrant and just golden. Let cool, then coarsely chop.
Assemble the salad
In a large bowl, toss the breadcrumbs, walnuts, apple slices, scallions, parsley, lime juice, and red pepper flakes. Season with salt and pepper. Drizzle over the olive oil and toss gently. Add the grated cheese last and give a final toss.
Serve
Serve immediately while the breadcrumbs still have crunch, or let sit 5–10 minutes to soften slightly for more of a salade composée texture.
Notes
• This salad is best the day it’s made, but leftovers keep well for 24 hours — especially if you like things a bit more “bread pudding meets salad.”
• Add grilled chicken or prosciutto for a more filling version.
• A sprinkle of pomegranate seeds or dried cranberries can add seasonal colour and tang.
