Simply grilled chicken and lightly toasted brioche buns are topped with a bright, creamy salsa of avocado, lime, fresh ginger, spring onions, and just enough wasabi to give it a little lift.

An excellent warm-weather supper: fresh, satisfying, and rather more interesting than the usual chicken sandwich.

 

 

Use chicken breast cutlets if you can find them; they cook quickly and evenly. The avocado salsa should be made shortly before serving, while the chicken is on the grill and the buns are toasting.

Grilled Chicken Sandwiches with Avocado Ginger Salsa

For the Avocado, Ginger & Wasabi Salsa

  • 30 ml or 2 tbsp fresh lime juice
  • 1 pinch kosher salt, plus more to taste
  • 15 ml or 1 tbsp finely minced fresh ginger
  • 10 ml or 2 tsp wasabi paste, or more to taste
  • 30 ml or 2 tbsp extra-virgin olive oil
  • 4 spring onions, white and light-green parts only, finely sliced
  • 1 firm, ripe avocado, peeled, pitted, and diced
  • Freshly ground black pepper, to taste

For the Chicken

  • 4 boneless, skinless chicken breasts
  • 30 ml or 2 tbsp extra-virgin olive oil
  • Kosher salt and freshly ground black pepper

To Serve

  • 4 brioche-style hamburger buns, split
  • 4 small butter-lettuce leaves
  • Lime wedges, optional

Instructions

Make the Salsa

  1. In a medium bowl, combine the lime juice, a pinch of salt, ginger, and wasabi paste. Stir until the salt has dissolved, then whisk in the olive oil until lightly emulsified.
  2. Fold in the spring onions and diced avocado. Season with black pepper and a little more salt, if needed. Set aside at room temperature while you grill the chicken.

Grill the Chicken

  1. Heat a grill or grill pan to medium-high heat. Brush the chicken cutlets with olive oil and season generously with salt and pepper.
  2. Grill for 4–6 minutes per side, depending on thickness, until the chicken is golden in places and cooked through. Transfer to a plate and leave to rest for a few minutes.

Toast the Buns

  1. Place the buns, cut side down, on the grill for 1–2 minutes, until lightly golden and warm.

Assemble the Burgers

  1. Place a lettuce leaf on the bottom half of each bun. Top with a grilled chicken cutlet, then spoon a generous amount of avocado, ginger, and wasabi salsa over the chicken. Add the top buns and serve immediately, with lime wedges alongside if you like.

Notes

A Note on Shortcuts

Grilling gives the chicken its best flavour, but this is also very good with slices of warm roast chicken—particularly useful for an easy lunch using leftovers or a good deli rotisserie chicken
