Mid-week entertaining can be a bit of a challenge, especially in the jam-packed weeks leading up to Christmas. Our new neighbours were dropping by for a drink and a few nibbles and I was fresh out of ideas and time. Thank heaven for Google. I searched for Quick Appetizers and was rewarded with Real Simple’s 20-Minute Party Appetizers.
My interest was piqued by the combination of soft ricotta cheese and golden raisins, and reasoned that candied ginger would make an excellent substitution for the almonds, as one of the guests is allergic to nuts. I’m happy to report that these were a snap to make, and disappeared as quickly as I produced them.

Endive with Ricotta Cheese, Candied Ginger & Golden Raisins
A fast, fresh and delicious appetizer.

Ingredients
- 2 Belgian Endives, ends removed, leaves separated
- 1 1/2 c ricotta cheese
- 1/2 c golden raisins
- 1/4 c candied ginger, diced into 1/4” pieces
- 2 tbsp olive oil
- 2 tbsp chopped chives
- 1/2 tsp kosher salt
- 1/4 tsp pepper
Instructions
- In a small bowl, mix the ricotta cheese, raisins, ginger, olive oil, chives, salt and pepper.
- Arrange the endive leaves on a serving platter and top each one with a dollop of the cheese mixture.
